2 cups black-eyed peas, cooked
1 cup corn kernels
2 Roma tomatoes, seeded and diced (approx. 1 cup)
1/4 cup red bell pepper, small diced
1/4 cup green bell pepper, small diced
2 Tbs apple cider vinegar
3 Tbs extra virgin olive oil
1 Tbs fresh parsley, chopped
2 tsp Dijon mustard

- In a large bowl, combine the peas, corn, tomatoes and bell peppers. Whisk together the remaining ingredients. Pour the mixture over the vegetables. Toss to coat. Chill for at least 30 minutes before serving.
